Lemongrass tofu, greens, and glass noodles

Lemongrass marinated tofu with Asian greens over mung been vermicelli (glass) noodles. An inspiration from the cookbook “Neighborhood” by Hetty McKinnon.

We paired it with a perennial favorite: a cutting board with sliced keepsake apples, Brie cheese, smoked Gouda, and charcuterie.
